Everytable

The situation

Everytable needed to move its kitchen and assembly operations into a new 35,000 sq ft FDA facility and absorb a large increase in business. There was no functioning food safety and quality assurance (FSQA) program in place under the previous management.

What Nacho did

  • Opened and commissioned the new facility and hired more than 250 employees.
  • Transferred kitchen and assembly operations into the new plant.
  • Designed the plant's equipment configuration layout and purchased all major pieces of equipment to absorb the increase in business.
  • Built the Quality Assurance and Sanitation departments from scratch to put an FSQA program in place.
  • Ran the full supply chain: sourcing and contracting commodities, forecasting, warehousing, inventory control and weekly production scheduling.
  • Trained a workforce of more than 275 employees in executing menu entrées to quality standards under USDA/FDA guidelines.

The result

Production rose from 5,000 to 38,000 meals per day within seven weeks. The labor and manufacturing efficiencies of the new plant helped the company become profitable within six months, for the first time in its five-year history.
